We are enjoying such a variety of vegetables right now — and there are such quantities of some of them. I found a delicious recipe for marinated tofu and vegetables in the Simply in Season cookbook. Some of the vegetables it called for were summer squash, cherry tomatoes and potatoes. We grilled them on the BBQ.
Andy has prepared the area that our metal frame greenhouse will be slid over (see first picture in this post). Spinach will be seeded there very soon. We have also been discussing fall and winter crops which include many more carrots and lots of greens – like salad mixes and asian greens.
